Our story

We live in Sciacca, a seaside village a few kilometres from Agrigento, where, since 1969, we have managed to create a third-generation family business of considerable importance in anchovy products.
Our company’s main aim is to guarantee our customers the best quality of anchovies sold in jars and packs and that are perfectly ripe and rosy, exclusively sourced from the Sicilian and Spanish coasts.
And it is within this context that we strive to be one of the few companies that is still directly involved in the production of salted fish preserved in olive oil.

SALT

Anchovy (Engraulis encrasicolus) is fished in the waters of the Mediterranean Sea. Subjected to processing within 24/48 hours of capture. The selected decapitated anchovies are eviscerated by hand and pressed in brine for the time necessary for their maturation. Preserved in salt and saturated brine in tinplate containers or plastic boxes..

The production of anchovy fillets in oil follow different stages of processing, from the arrival of fresh fish in the storage plant of the same in food sites left to mature before moving on to the drying phase of the product through centrifuges. Once the liquid part has been removed, the operators proceed to filleting them by hand, who position them in glass jars of different sizes, and then cover them with olive oil or sunflower seeds. All respecting the ancient traditions handed down from generation to generation.
